Italian Breadcrumbs

Easy peasy to make your own bread crumbs. Just take a few pieces of bread and blitz it up in your food prBread_crumbsocessor, mini chopper or blender. I like to save the heels from a loaf of bread and use those. Waste not, want not! Once you get them ground up, you can store them in the freezer. To make Italian bread crumbs, just mix in a few herbs and seasonings. If you’re going to use them for breading meat, like this Chicken Parmesan, toast the breadcrumbs in a 300F on a baking tray for 10 minutes and then rub them with your fingers to make a smaller, panko-like crumb. This will give you a light, crunchy crust!

Toasting the bread crumbs after you mix in the spices will give a nice coating to your breaded and fried cutlets. Rub the toasted crumbs between your fingers to produce a fine breading that will add an extra crispy crunch!
  • 1 cup bread crumbs
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  1. Tear several slices of bread into the container of your food processor, mini chopper, or blender. Blitz until all everything turns into small crumbs.
  2. To one cup of crumbs (more or less), add all the spices and mix.
  3. Place the crumbs in a pie plate and bake in a preheated 300F for approximately 10 minutes, until lightly toasted.
  4. Rub the crumbs between your fingers to further break them down into a very fine texture. Use immediately or store in a covered container.
